The Center, the sensory path, and the olive trees

Our territory

Our way of practicing agriculture and doing business on a wonderful territory like that of Campofilone, in the Fermano area, is based on respect for the land and a mindset open to innovation. For us, olive growing means acting with awareness to tackle significant challenges related to the growing focus on food safety and quality, the ecological sustainability of field production, and the health and safety of our collaborators.

Our challenge is called organic farming, which allows us to achieve agriculture in harmony with the environment and to eliminate our ecological footprint, also helping us pursue goals of quality and excellence. It’s a wonderful emotional journey that helps us improve ourselves, our well-being, and, hopefully, our feelings towards the world that hosts us.

The center and the ecomuseum

At the Territorial Interpretation Center of the Ecomuseum of Valdaso, you will learn about the history of Mondomini and the life of the 8,500 olive trees hosted there, making this place so unique.

You will have the opportunity to closely explore the life cycle of the olive trees and their cultivation, the differences between 10 varieties of olives, innovative and traditional cultivation methods, as well as century-old and young trees.

Sensory Path among the Olive Trees

Discover the accessible sensory path of Mondomini, where you can explore its 8,500 olive trees with all five senses. The path is divided into three stages: the Chapel of San Filippo, which recalls the origins of the place in the 1700s; the Century-Old Olives; and the Traditional and Intensive Olives. During the visit, you will be able to observe 10 varieties of olives, touch trunks and leaves, and learn to distinguish their characteristics based on age.

Additionally, you can listen to the sound of the wind among the olive branches and, if you wish, complete the experience by tasting Mondomini extra virgin olive oil, a symbol of the authenticity of the region. An unique opportunity to experience nature in a complete and immersive way.

The olives and the oil

Our 8,500 olive trees grow on hills that overlook the sea. Here, balanced temperature fluctuations between day and night, combined with the typical clayey soil, produce harmonious and rounded oils to meet the various needs of those who taste them.

We harvest the olives when they reach the perfect stage of ripeness and cold-press them on the same day in continuous-cycle facilities to ensure excellent quality and preserve their aroma, color, and flavor.

Tastings

Our tastings are designed to guide you on a sensory journey that involves all the senses.

The tasting takes place in a charming environment, where olive oil experts will guide you in tasting our varieties of extra virgin olive oil, such as Oliverotto, Favoloso, and Sublime. You will learn to recognize the fruity and aromatic notes that characterize each oil and understand how these perfectly complement different culinary dishes.

Raccogliamo le olive in leggero anticipo rispetto a quando raggiungono il perfetto stato di maturazione. L’olio che otteniamo è ricco di polifenoli, di proprietà antiossidanti e dal caratteristico sentore amaro e piccante​

La Raccolta

Lavoriamo le olive entro 8 ore dalla raccolta, in impianti a ciclo continuo secondo il metodo "spremitura a freddo", dove la temperatura non superi mai i 27 °C. Così l’olio mantiene inalterate le caratteristiche nutrizionali e fisiche conservando le proprietà e potenziando i benefici che ne derivano una volta consumato.​
