“Pista del Maiale” (literally “Pork Trail” or “Salata”) represents an authentic immersion in the Marche charcuterie tradition, as it retraces an ancient but still vibrant ritual, when entire families gather to process the pig.

1. DISCOVERING CURED MEATS

During the day, a skilled pork butcher actively guides families in the preparation of typical Marche cured meats such as ham, loin, sausages, chops, and coppa, following techniques passed down through time and reflecting authenticity and artisanal care.

2. PROCESSING

Participants of all ages get involved in the processing, making the event an engaging experience.

3. FLAVORS

The day culminates with the tasting of typical dishes from Marche, prepared with freshly processed products and accompanied by the finest wines from Valdaso. This combination of flavors offers a journey through the culinary tradition and history of Marche, creating an unforgettable experience of authenticity and conviviality.
