Smell: Intense and persistent fruity, with distinctly prominent herbaceous and green tomato scents.

Taste: Complex and elegant in the mouth, it has a broad fruity character, with fresh green sensations of freshly cut grass, green tomato, and artichoke dominating over sweet-ripe notes and aftertastes related to dried fruits such as almond, hazelnut, and pine nut. Bitter and spicy are present and well expressed.

Pairings: Excellent for enhancing the flavors of mushrooms, boiled potatoes, soft fresh cheeses, roasted fish, chicory, radicchio, and other bitter salads.
